  • Don't use your best wine for cooking, use good wine. Something you'd drink when you're trying not to spend too much money. In fact, you probably won't use the whole bottle, I suggest drinking the rest of the wine with the meal when you're done cooking.

    • as long as you like taste of the drink its self. most of the alchol will evaporate

  • Anyone else find rare steak to be chewy? Medium-rare is the sweet spot. Also, don't be a Babish. Don't pan fry a steak and then judge other people on how they eat steak. Barbecue it and then judge them.

    • Find someone who knows their wine. Try a liquor store and hang out in the wine aisle for either an employee or a wino

  • So i tried to make the chicken pan sauce, it was so rich! The only thing for me was the lemon overpowered the sauce, even though i only put half a squeezed lemon in haha not sure what I did wrong but I'm try again to make it better!

    • In my experience yes. When you cook with wine, the heat removes all of the alcohol. Just follow the recipe and you should be fine! Hope this helped.

  • I watched as he was cutting the steak, and thought, oh, that looks perfect, not too raw like most chefs! Then he goes and makes a comment about it being overcooked... Medium is not overcooked, it is perfect! LOL

    • If you prefer medium that's totally cool, but as far as most pros are concerned, *medium-rare* is perfect.
