    • I really appreciate that you acknowledge kenjis recipes and techniques on your channel. IMO hes the current father of food science and so many food channels just steal his techniques and pass them off as their own.

    • a suggestion: try oregano in bechamel sauce. it tastes great! can use onion flavor as well, but very little.

  • my very white grandmas recipe: cut some veleveeta into cubes, cover with milk and microwave until melted into the milk, add 1lb of pasta. barely use any other seasonings. still slaps tbh

  • Try using cream of mushroom soup instead of bechemel or condensed milk. It’s a massively delicious difference.

  • A heaping tablespoon of Ghee + 1/2 cup of whole milk instead of evaporated milk works extremely well in J. Kenji recipe. Liquid emulsifies into a smooth creamy sauce.

  • The intro never gets old in my opinion.

  • When I do a mac bake, I use a little paprika in the sauce, not cayenne. Totally optional, but just wanted to recommend a substitute! Also, my brother LOVES it when I add raw broccoli florets or cooked ham cubes (no more than a cubic centimeter) into the mix before baking in the oven. Adds protein and nutrients for picky eaters.

  • I made Kenji’s version. It was alright but to this day I’ve never had a homemade Mac and cheese that didn’t turn out with a weird sandy texture. Don’t know what I’m doing wrong.

    • Thank goodness I’m not the only one. I used medium shell pasta because I prefer shells to elbow macaroni and the only shell size available was medium. I did everything else the same. I’m not sure what cheese was used in the video.

  • He is wearing a Rolex submariner or sea dweller. The watch is not a chronograph and has no pushers and therefore when he says that the mac & cheese would turn into a brick in about 5 minutes, he is PRETENDING to press a pusher but he is not, it isn't a chronograph. BUSTED!!!!!!!!!!!! P.s I am into watches and I am a huge fan of binging with babish, but do NOT hate.

  • I tried the J. Kenji Lopez-Alt method and it didn’t work out for me. Sauce was grainy and without flavor. 😔

  • Just used that J Kenji Lopez Alt recipe and it was so mindbogglingly easy and delicious

    • What kind of cheese did you use? I used Tillamook sharp yellow cheddar and it was grainy for me and without flavor. Pasta choice shouldn’t make a big difference, though, right?

  • My first ever Roux was burned to all hell before I even realized it, but the second one was worthy of a fork shake.
