Passover approaches, and thanks to the magnificent meal made by Midge Maisel, we've got a great excuse to whip up some Jewish BBQ on the show. Slowly braised to tender perfection in a delicate balance of sweet, sour, and savory flavors, this brisket outshines even charoset at the Seder table. And that shit is delicious.

  • Just a note to anyone making this in the UK: my brisket came with almost no fat, therefore searing took longer, the meat cooked, and the brisket ended up tough. I know that because I just finished being livid about it as I spent 6 good hours on this, and a little research showed that this is the only possible reason as I followed the recipe to a T. I'm pretty sure the searing is more or less just a cosmetic thing (the meat looks more appealing) so next time I'm just gonna skip this step and drop the meat onto the sauce. TL;DR; be really careful with the searing, maybe less than 5 minutes or not at all.

    • If you have less fat you sear it less on that side. Searing is still very important to have brown flavours.
