  • @BabishCulinaryUniverse The "canned air" you use (UDS-10MS-P6) has a bitterant added to avoid abuse as an inhalant. Any food you spray with that will taste just horrible, though it shouldn't be toxic. You probably want to use food safe canned air like chef rubber or some other freeze spray for chocolate and sugarwork.

  • I don't know it you answer to technical questions but how do you maintain working temperature for so long without it setting in the bowl? I always have this issue and here it seems you left it aside for a while before using it.

  • Canned air includes a bitterant to disuade consumption (specifically inhalation) because it's poisonous. They do the same with antifreeze, in that case if they didn't it would actually taste sweet, and... you know, deadly. I can't imagine anything the canned air touched tasted good at all.

    • Though interestingly they were using dark chocolate, so I wonder if its bitterness covered up the stuff from the can... 🤔

  • I worked at Dancing Lion Chocolates for a brief amount of time and they also use valrhona. They just got a machine to make their own chocolate and the owner was suuuuper excited for it.

  • That canned air almost certainly ruined any chocolate it touched due to the bitterant. You can buy duster cans without bitterant but they're not branded for office use and not really available at normal retail (other than online).
