  • Just another tip: you're supposed to add some sort of fat to the shot immediately after brewing it. This will prevent the shot from "dying" and becoming bitter, instead leaving you with a nice, almost creamy coffee taste. Of course, there are probably recipes that call for dead shots or people who prefer the bitterness, but adding fat immediately afterward was what I was personally taught to do.

  • By definition moka pots can't make espresso. You need 9 bars of pressure to extract espresso, which the moka pot can't produce!

  • I doubt anyone will read this, but, trade actually is a great coffee seller. I love the subscription, and personalization. The worst coffee I had from them was still quite nice, had some clear quality, just not my thing, and if I cared more, I could've had them change it out if I didn't enjoy it enough. I still liked it, the coffee's are fresh, and with the right makers, you can get everything out of them. I really think for 14$, you're getting an excellent bag.

  • The Moka and Aeropress don't produce enough bars of pressure for espresso. You need 9 bars which the Flair can do, though since it's human powered, makes it very fussy to be consistent. You don't have to spend a few grand for an espresso machine, but you should expect to pay at least a few hundred unless you can find one used. If you're at the point where you're considering a Flair Manuel Press, quality kettle with thermometer and quality burr grinder, you should probably just be considering a real espresso machine such as Gaggia or Breville.

  • Ciao Babish, the affogato should be with hazelnuts icecream, the "romano" i never heard about it (and i lived in rome for 10yrs), you should try the "al ghiaccio" : pour a single shot expresso over 3 ice cubes and add a hint of almond milk. overall good preparations but if i can add a detail, too much coffee. an eSpresso, at least in italy is 3 sips no more than that.

  • Hi, Barista here! Everything in this video was relatively on point! My only observation was that typically an Espresso Macchiato or a Latte Macchiato should be made by pouring the milk/foam in first and then the espresso on top! Some speculate that this is because by pouring the espresso through the milk, it changes the flavour of the espresso/overall drink! (I say it’s bullshit but to each their own!) I believe “Macchiato” means ‘stain/stained’ and when you make a macchiato with this method you get a brown spot on top of the foam from the espresso ‘staining it’. All cafés are different though! Hope this helps anyone! :)

  • Affogato is one of my favorite desserts! I love Cortados too! I drink my coffee black and enjoy the little-to-not sweet drinks. A great way to do a Cafe Mocha is to replace chocolate sauce with actual pieces of chocolate that is melted by the heat of the espresso. Sometimes sauces and syrups have a sweet artificial taste that you won't get with pure melted chocolate. Okay, my Barista nerdiness is over. Great video!

  • I don’t like espresso. But by god, I LOVE the affogato. That mix of cold, sweet cream and hot, bitter coffee is so good. And what you have at the beginning is different than what you get towards the end. It’s great.

  • I'd like to add that my cousin has a handheld milk frother. It's a small device that you stick into your cup of milk and it both heats and foams it up very nice, and it's barely bigger than a fork. They can go for 19.99$ on Amazon but you can surely get it for much much less.

  • I love you man, but as an Australian, I have to comment on the uh, concessions, you made to the proper method. I get making Espresso accessible, but from a flavour to effort ratio I'd have to say make cold-brewed or drip coffee at home rather than espresso unless you have the machine (you should be able to get machines super cheap, I've seen them for 70 USD in stores in Australia) because unless you're an absolute god at that hand-press you're going to spend a lot of time squeezing for bitter or watery espresso. However, with the other methods it's far more forgiving to make a good coffee. Also as a side note, if you're not into straight espresso (often called a Short Black in Australia) if you get the chance to go to a roastery, ask if they have a more nutty coffee blend and get that as an espresso, it will change your life.

  • For a more savory mocha, replace the horrendous chocolate syrup with cocoa powder, or with dark chocolate if you want something richer. I find mocha made with syrup is sickly sweet, but coffee and chocolate is a great combination.

  • third-wave barista here! There are two types of cappuccinos! The specialty coffee shops in the states usually serve caps as a 6 or 8 oz drink, two shots of espresso and delicately steamed milk, with microfoam (same as latte). So essentially, it's a smaller latte. 2nd wave shops usually serve their cappuccinos in different sizes and use the extra foam method. the way that I've always made / received cortados is that it is normally a double shot of espresso (2oz) and 2oz of milk with a little bit of that microfoam!
