The perfect accompaniment to your morning coffee is, unsurprisingly, a confection known as coffee cake. Containing no actual coffee, it is instead a lightly sweetened pound cake that's essentially just a vehicle to get streusel into your mouth as quickly and efficiently as possible.   • Can someone help me with this cake? I made this today and the taste was AMAZING! I used a square ceramic baking dish lined with parchment paper because my loaf pans are smaller than Babish's. My issues were, my streusel was a bit lower even tough I made sure most of my cake batter was below. I didn't have turbinado sugar so instead added more brown sugar to make up for it. My cake crumb was so ridiculously soft and fluffy, heaven BUT Babish's cake crumb looks firmer and that's the kind of crumbs I like. I don't have a paddle attachment so I just used a regular electric hand mixer. Also my cake was a bit greasy. I used the exact same measurements using a scale, everything was room temperature the whole day before baking. I made another loaf cake and everytime I mix my butter, sugar and eggs they curdle. Any advice?

  • Made twice. First time used too small a loaf pan causing cake to explode all over oven and crumbs to fall to bottom. Made 2nd time with proper large loaf pan and while no longer going all over oven, still had issue with crumbs falling inside cake during baking and cake taking much longer than advertised to cook. Any ideas on what I could be doing wrong? Recipe followed exactly!

  • Good gods. For all the Germans in the comments, we get it-y'all pronounce it "shtroy-zel". But maybe if you read the video description, you'd realize that we also spell it Streusel in the States-Germans were once the biggest immigrant group to the US, and helped form our culture. We just happen to pronounce it as "stroo-zuhl" because of whatever phonetic changes the word underwent when it got here. Probably because we tend to see the morpheme "eu" as "oo" instead of "oy", like in German, although we don't have a hard and fast rule about that unlike in the latter language.

  • Shouldn't crack the egg on the side of the bowl, it drives pieces of the shell into the egg. Also should break them into a separate bowl first.
