One Pot Pastas | Basics with Babish

One pot meals are the best of both worlds - quick and easy prep and an even quicker cleanup. Check out these one pot pasta recipes from the Quicker Picker Upper. Skillet Lasagna Ingredients
10 lasagna noodles, broken into bite-size pieces
1 Tbsp olive oil
1lb mild or spicy italian sausage, casings removed
½ large onion, chopped
2 cloves garlic, crushed
1 tsp red pepper flakes (optional)
28 oz can san marzano tomatoes, crushed
½ cup hot water
8 oz tomato sauce
2-3 oz fresh parmesan cheese, grated
8 oz mozzarella cheese, cubed
Ricotta cheese, to taste
Fresh basil, chopped
Chicken & Fennel Pasta Ingredients
1 fennel bulb, thinly sliced
2 sprigs rosemary, chopped
2-3 cloves garlic, crushed
2 Tbsp olive oil
1 Lemon
Red pepper flakes, to taste
4 bone-in, skin-on chicken thighs
Kosher salt
Freshly ground pepper
1 Tbsp vegetable oil
½ large onion, chopped
1 cup dry white wine
2 cups chicken stock
8 oz whole wheat pasta
2-3 oz romano cheese
Handful fresh basil, chopped
Parsley, for garnish
Beef Stroganoff Pasta Ingredients
2 pieces skirt steak (or beef of choice)
8 oz cremini mushrooms, rinsed and chopped
2 Tbsp vegetable oil
1-2 Tbsp butter
½ large onion, chopped
2 Tbsp paprika
1 Tbsp fresh thyme
1 cup dry white wine
2 cups chicken stock
1 cup sour cream
Worcestershire sauce
Parsley, chopped, for garnish
Kosher salt
Freshly ground pepper

  • We're doing the fennel pasta today and it's going to be the 2nd time. We absolutely love it!

  • Made the skillet lasagna yesterday - it was delicious. A tip if you cannot easily get Italian sausage where you live (or if it is extremely expensive, like here): Get some pork mincemeat instead. Spice it up with some crushed fennel seeds (about a teaspoon for a pound of meat), hot pepper flakes (I would use one small pepper or a bit more), freshly ground pepper, salt and a heaped spoon of oregano, just mix all of the spices into the meat. Cut up some bacon and throw that into the skillet before you cook the meat (I usually cook the bacon until it is no longer raw, but not quite done, then toss the mince meat in). This is really tasty, a bit leaner than sausage and quite inexpensive.

  • We tried the stoganoff last night. Not as good as the "original". All the sauce went away in the pasta cooking. Cooking the pasta like this was a big loser. I wonder if I will have the nerve to try another of your recipes? This one was so disappointing... different is not the same as better.

  • It really makes all the difference how you cut the beef for stroganoff. Trust me, Ive been making stroganoff of different types for years :D You need to cut against the ''grain'' of the meat and then let it sit for a bit.

    • mack89464 oh that makes sense. In that case a slow cooker would be a great option. Although it may take a bit longer

    • @Hridaya Jamkatel Not sure I understand the "no point" bit. There are lots of people living in small spaces who don't have a stove top and get by with a slow cooker type machine. I work with a lot of students who need good nutritious meals and have sent this out to a group of them who live in such spaces and they were overjoyed with the concept !! Great to see such simple meals being posted that are delicious !! :-)

  • Hi buddy. In the UK most of us pronounce it Wuster Sauce. If we pronounce the region it’s wuster shuur not Worcestershire. Hope this helps if not get over here!!!

  • Isn't a major purpose of one-pot dishes, that you can all do it one pot somewhat together, and everything gets to know each other from start to finish and you have to do less cleaning up? i kinda seems like the way of doing sth in one pan, taking it out, letting it sit, do sth else in the pan, prepare sth else in a bowl, and at the end reheat everything together, was originally intended to be multiple pans that cook at the same time and then it would be faster as well.

  • Made recipe # 2 tonight after work and TOTALLY forgot to account for the electric stove I'm using. If you're using a poop apartment stove live me, I would heat up the pan first. Mine on medium heat prevented the chicken from browning and essentially drowning in it's own grease. Not Babish's fault but mine - just a reminder for new/apartment cooks. Electric stoves are blech!

    • Often Electric stoves can be much hotter than most gas stoves. I almost lit my kitchen on fire making fondant potatoes
