I've made pies on the show before, but it's about time that I talk about the basics of making a really good pie - whether it's blueberry, apple, or pumpkin.

  • For anyone that plans to make this, a stick of butter in the US is 110g. In Australia they come in 250g sticks, and I nearly put in half a kilo of butter in this, before looking it up.

    • It really change how the pie crust come out. It's really best to try to keep your crust as cold as possible to prevent this :)

  • Fun fact about berry pies, its better to use tapioca starch especially blackberry (my fav)

  • These pies look delicious!! But I must say... I have been baking pies of all kind for years and never have I needed to blind bake especially a double crusted pie. This over complicates things. If you bake any of your pies for the proper amount of time you will not have a soggy bottom and that goes for apple pies or fruit pies of any kind. The only time I’ve ever blind bake a pie is when it’s a pie that does not return back to the oven after it’s made.

  • hey, i followed this recipe to make the latticed pie crust, though instead of blueberry i used a recipe from sally's baking addiction for a strawberry rhubarb filling. came out with a damn good pie, nice flaky crust, no soggy bottom, just a great result for my first try. thanks for the video.

  • I decided to make pie from the pressed blueberries from wine making. It's got a different texture since they have been crushed and I had to add water and sugar, then rehydrate them first before using, but it tastes really good. Plus, it's using something we would normally not eat and we'd just throw it away (and by that I mean into the compost bin). It tastes like a normal pie. More work, but they were given to me for free, so all I had to pay for was the crust so really cheap food. Shame I can't exactly share any this year, but so it goes.

  • Babish, this might be somewhere else in the comments, but the pumpkin pie cracked because it cooled too quickly, not because you overcooked it. To prevent that you could let it cool in the open oven, once it's been turned off.
